Last night we had the amazing opportunity to help with the Just Food event / fundraiser with speaker Sandor Katz. Several local fermentation companies in the New York area came out and brought with them an expansive tasting of ferments: Oswaters Bakery, Hampton Brine, Crock & Jar, Hawthorn Valley, Small World, Mama O's Kimchi, and Crown Finish Cheeses. Such amazing ferments from such amazing people!
Sandor started off the night with an amazing talk on cultures, touching on the human microbiome, gut health, fermentation history, and the basics of making sauerkraut. If you've never had a chance to see him present we highly suggest you do it! Every time we've heard him talk we've learned something new. The audience full of newbies to more experienced fermenters brought amazing questions to the table and then we all stuffed our faces as all fermenters like to do.
